Peanut Butter Cookie Dough Brownies

makes 24 brownies topped with a layer of peanut butter cookies dough and chocolate ganache
 
Brownie Layer
1 cup unsalted butter
4 oz unsweet baking chocolate
2 teaspoons vanilla
2 cups sugar
4 large eggs
1 cup & 4 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 ½ cups semi-sweet chocolate chunks
 
Peanut Butter Cookie Dough Layer
½ cup unsalted butter, room temperature
1 cup light brown sugar, packed
4 tablespoons milk
1 cup peanut butter
1 cup & 4 tablespoons all-purpose flour
1 teaspoon salt
 
Ganache Layer
1 ½ cups chocolate chunks
½ cup heavy whipping cream
½ cup coarse chopped peanuts
 
Directions
1. Heat oven to 350 degrees F, spray muffin tins with grease
2. Make the BROWNIE layer
a. Melt butter & chocolate squares, then mix in vanilla
b. Beat the sugar & eggs together until combined
c. Beat in the melted butter/ chocolate
d. Stir in flour, baking powder, and salt until combined, then stir in the chocolate chunks
e. Spoon into prepared muffin tins, bake for 15-20 minutes, or until set
3. Cool the brownie layer for at least 30 minutes before putting the peanut butter layer on top, or taking them out of the muffin tins!
4. Make the Peanut butter cookie dough layer
a. Beat the butter and brown sugar together until fluffy
b. Beat the milk and peanut butter into the butter/ brown sugar until combined
c. Stir in flour and salt
d. Spread over cooled brownies
5. Make the Ganache layer
a. Microwave the cream and chocolate chunks together for 1 min (stir at 30 seconds)
b. Stir until chunks are mostly melted
c. Cool the ganache slightly, the spoon over the peanut butter layer of the brownies
6. Sprinkle the peanuts over top
7. Chill in the refrigerator until cooled/ set. Approx 1 hour.
