Cinnamon Buns (Rolls?)

Dough– from In Jennies Kitchen
2 ½ cup all=purpose flour, plus extra for rolling
¼ cup granulated sugar
1 ½ teaspoons baking POWDER
½ teaspoon baking SODA
½ teaspoon salt
1 cup buttermilk,
¼ cup unsalted butter, melted
 
Filling– common
1 cup light brown sugar
¼ cup ground cinnamon
¼ cup unsalted butter, softened
 
Icing– adapted from In Jennies Kitchen
2 oz cream cheese
1 cup powdered sugar
½ teaspoon vanilla
3 tablespoons buttermilk
 
1. Preheat oven to 425 degrees F, line a 11×8 baking pan with parchment paper & lightly grease it
2. Whisk flour, sugar, baking powder, baking soda, and salt together in a large bowl
3. In another bowl whisk buttermilk & melted butter together
4. Add buttermilk/ butter to flour mixture, stir with a wooden spoon until incorporated (dough will be sticky, and rough looking)
5. Knead the dough around 4x, until it becomes smooth and less sticky, divide dough in half
6. One half at a time, roll into an 11×8(ish) rectangle on a lightly floured surface
7. Combine brown sugar & cinnamon together for the filling
8. Spread softened butter on dough, sprinkle cinnamon & brown sugar over it, press down gently to “stick” the filling in place
9. Staring from the long side further away from you roll the dough sheet towards you, then pinch the end closed
10. Cut each log into 8 pieces, place into pan, and bake for 15-20 minutes, or until rolls are light golden brown
11. While cooling, make icing by mashing cream cheese & powdered sugar together, then adding buttermilk & vanilla and stirring until smooth
12. Iced slightly cooled cinnamon buns
13. Try not to eat them all
