Potato, Broccoli & Cheese Soup

makes approx. 9 cups

5 medium potatoes, peeled & diced
1/3 cup chopped red onion
1 teaspoon minced garlic
4 cups water
½ teaspoon salt
½ teaspoon pepper
1 (10 ¾ oz) can broccoli & cheese soup
1 (10 ¾ oz) can cream of potato soup
½ cup chopped ham
¼ cup instant mashed potato flakes
1 cup broccoli florets
1 cup shredded cheese
  1. In a LARGE sauce pan combine water, potatoes, onion, and garlic
  2. Bring it to a boil, then switch to med heat until potatoes are tender
  3. Add remaining ingredients (except cheese), simmer/ cook on low until hot.
  4. Stir in shredded cheese and serve
1703 calories total/ 9= approx. 190cals per cup
