Boozy S’mores Cookie Dough Stuffed Cupcakes (recipe)

makes 26
Chocolate cake baked with chocolate vodka, stuffed with honey cinnamon cookie dough & topped with Fluff buttercream (made with marshmallow vodka)!
Cinnamon Honey Cookie Dough
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
2 sticks unsalted butter
1 cup packed light brown sugar
½ cup honey
1. Whisk flour, baking soda, cinnamon, and salt together
2. Cream butter, brown sugar, and honey together
3. Gradually beat/ stir in flour mixture until well combined
4. Make 26 (+ a few extra just in case) tablespoon sized balls, freeze overnight
There will be LOTS of dough leftover! Use some to make garnishes (see below), and eat the rest!
Boozy Chocolate Cake
2 sticks unsalted butter, softened
¾ cup cocoa powder
1 cup chocolate vodka
2 cups white sugar
1 cup sourcream
1 ½ teaspoons vanilla
2 eggs
2 cups all-purpose flour
¾ teaspoon baking SODA
½ teaspoon baking POWDER
½ teaspoon salt
1 bag (11.5 oz) milk chocolate chips
1. Preheat oven to 350 degrees F, line cupcake tins with paper liners
2. Melt butter, then add cocoa powder, vodka, and sugar, whisk until smooth, cool to room temperature
3. Whisk eggs, vanilla, and sour cream into butter mixture
4. Combine flour, baking soda, baking powder, and salt
5. Gradually beat flour mixture into wet mixture, then stir in chocolate chips
6. Fill cupcake liners ¾ full, and press a frozen cookie dough ball into the middle of each
7. Bake for 15-20 minutes, or until toothpick inserted into CAKE comes out mostly clean
8. Cool before frosting
Boozy Fluff Buttercream
4 sticks unsalted butter, softened
2 cups powdered sugar
2 tablespoons marshmallow flavored vodka
1 tub (16 oz) Fluff
1. Beat butter until fluffy
2. Add powdered sugar ½ cup at a time, beating between each addition
3. Beat in vodka, then beat/ stir in Fluff until combined
S’mores Garnish
13 marshmallows, cut in half
7 snack size chocolate bars, cut into quarters
13 tablespoons cinnamon honey cookie dough
1. Divide the cookie dough into ½ tablespoon sized balls, flatten slightly
2. Place a piece of chocolate on each, and top with a marshmallow
3. Broil (on high) for a minute, or until marshmallows are slightly brown (watch them, it only takes a second for them to burn)
4. Cool before putting on top of the frosted cupcakes
