Creme de Menthe Brownies (with Andes)

Crème de Menthe Brownies– makes 20
½ cup unsalted butter, softened
12 oz semi-sweet chocolate
1 2/3 cups granulated sugar
1 ¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla
3 eggs
½ cup Crème de Menthe
28 Andes Mints, chopped coarse
1 cup white chocolate chips
1 cup milk chocolate chips
+/- Garnish (below)
¼ cup white chocolate chips, melted
¼ cup milk chocolate chips, melted
10 Andes Mints, cut in half
  1. Pre heat oven to 350 degrees F, grease a 9×13 pan
  2. Melt butter and chocolate over lowest heat setting, until completely melted and smooth
  3. Whisk sugar, flour, baking powder and salt together
  4. Beat in eggs, vanilla, Crème de Menthe, and chocolate mixture until smooth
  5. Stir in Andes, white chocolate chips, and milk chocolate chips
  6. Pour into greased pan, and bake for 30-40 minutes, or until a knife inserted in the middle comes out MOSTLY clean
  7. Cool COMPLETELY, cut into 20 pieces press an Andes onto each piece, and drizzle with melted white chocolate & melted milk chocolate
  8. Eat while sipping a big mug of hot chocolate (splashed with a bit of Crème de Menthe)
