- Preheat oven to 350 degrees F
- Remove pumpkin seeds from “guts”, then purée the guts
- In a large bowl cream the eggs and sugar, then add the pie spice, salt, and baking soda, beat on low/med speed until spices are evenly distributed
- Gradually add flour, mix well
- Add pumpkin purée and oil, beat on low/med speed until combined
- Fill lined muffin tins ¾ full, sprinkle oats on top
- Bake for 15-20 minutes
Pumpkin Spice Muffins
Makes approx 2 doz
5 eggs
3 cups granulated sugar
1 teaspoon ground cinnamon
1.5 tablespoons Pumpkin Pie Spice (McCormick)
1 teaspoon salt
1.5 teaspoons baking soda
2 cups pumpkin purée (mashed/chopped/crushed “guts from 2 pumpkins)
1 cup vegetable oil
+/- oats to sprinkle on top
