Peanut Butter Filled Chocolate Cookies

makes 32 (from Better Homes & Gardens)
 
1 ½ cups all-purpose flour
½ cup cocoa powder
½ teaspoon baking soda
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup packed light brown sugar
¼ cup peanut butter
1 egg
1 tablespoon milk
1 teaspoon vanilla
 
¾ cup powdered sugar
½ cup peanut butter
 
¼ cup granulated sugar
  1. Preheat oven to 350 degrees F, line a large baking sheet with parchment paper
  2. Beat butter, brown sugar,  ½ cup granulated sugar, and ¼ cup peanut butter together until well combined
  3. Add egg, milk and vanilla, beat well
  4. Whisk flour, cocoa powder, and baking soda together
  5. Gradually add whisked dry ingredients to wet, beat/ stir using mixer until impossible, then continue by hand
  6. Form chocolate dough into 32 balls, and set aside
  7. Combine ¾ cup powdered sugar and ½ cup peanut butter, form into 32 balls
  8. Slightly flatten chocolate dough ball, then wrap around peanut butter dough, roll into a ball
  9. Flatten ball slightly with the bottom of a glass dipped in the ¼ cup of granulated sugar
  10. Bake for 8 minutes, or until dough is set & tops are slightly cracked
