Amaretto Brownie Bites

makes approx 2 doz
Amaretto Frosting
2 cups powdered sugar
3 tablespoons unsalted butter, softened
1 ½ tablespoons amaretto
1 tablespoon Half N Half (or whole milk)
  1. Cream butter
  2. Add remaining ingredients, beat until smooth and spreadable
Amaretto Brownie Bites
½ cup unsalted butter, softened
12 oz semi sweet baking chocolate, chopped
1 2/3 cups granulated sugar
1 ¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla
3 large eggs
½ cup Amaretto
1 cup chopped walnuts, +/- toasted
  1. Preheat oven to 350 degrees F, lightly grease muffin tins
  2. On the stove top melt butter and chocolate, on lowest heat, stirring continuously
  3. Whisk flour, baking soda, and salt together
  4. Combine Amaretto and vanilla
  5. In a large bowl beat the eggs and sugar together until combined, then add the melted chocolate and butter, beat until combined
  6. Alternate adding flour mixture & amaretto to the sugar/ chocolate mixture, beat on low/ med speed until well combined
  7. Stir in walnuts
  8. Fill greased muffin tins half full, and bake for approx. 20 minutes or until middles are set
  9. Allow to cool completely, then use a plastic knife to loosen the edges, and pop out brownies
  10. Frost with Amaretto frosting
