Kahlua & Peppermint Red Velvet Cupcakes Recipe

Cupcakes– makes 24
3 cups cake flour
4 tablespoons cocoa powder
1 ½ teaspoons baking soda
½ teaspoon salt
¾ cup buttermilk
¼ cup Kahlua
1 teaspoon vanilla
1 teaspoon white vinegar
1 (1oz) bottle liquid red food coloring
12 tablespoons (1 ½ sticks) unsalted butter, softened
2 cups granulated sugar
3 large eggs
24 York Peppermint Patties, sliced in ¼’s or crushed
  1. Preheat oven to 350 degrees F, line muffin tins
  2. Whisk cake flour, cocoa powder, baking soda, and salt together
  3. In a separate bowl whisk together buttermilk, Kahlua, vanilla, vinegar, and food coloring
  4. In another bowl, cream butter and sugar for 2 minutes or until fluffy, add eggs one at a time, beating well between each
  5. Alternate adding flour mixture and buttermilk mixture to the sugar/ eggs, beginning and ending with the flour
  6. Fill each muffin well ½ way with the batter, then put one sliced (or crushed) York patty into the batter, and top with more batter until the well is ¾ full.
  7. Bake for approx. 17 minutes
 
 
Kahlua & Peppermint Buttercream
14 tablespoons (1 ¾ sticks) unsalted butter, softened
6 cups powdered sugar
¼  cup Half N Half (or whole milk)
¼ cup Kahlua
10 York Peppermint Patties crushed
  1. Beat butter until fluffy, add 3 cups powdered sugar, beat until combined
  2. Add milk, and Kahlua, beat until combined
  3. Add remaining powdered sugar & crushed York patties, beat until combined
