Apple Cinnamon Muffins

 makes 12 regular AND 6 large
 
Batter
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
1 cup unsalted butter, softened
1 cup sugar
1 cup brown sugar
4 eggs
2 teaspoons vanilla
4 apples, sliced or diced
 
Strudel/ Filling
2/3 cup packed light brown sugar
2 tablespoons all-purpose flour
¼ teaspoon cinnamon
2 tablespoons unsalted butter, room temperature
 
1. Preheat the oven to 375 degrees F
2. Line muffin tins with paper liners
3. Make the batter
a. Whisk flour, baking soda, baking powder, salt, and cinnamon
b. In the bowl of a stand mixer beat together butter & sugars until combined
c. Beat in the eggs one at a time, then the vanilla
d. Stir in apples & flour mixture until well combined & smooth
4. Make strudel/ filling by combining all ingredients until crumbly
5. Fill the muffin tins ½ way, sprinkle with a layer of strudel, fill the tin until they’re ¾ full, then sprinkle the tops with more strudel
6. Bake regular sized muffins for 15-20 minutes, and large muffins for 30-40 minutes
