Sweet Potato Fries

makes approx 8 (4oz) servings

3 large sweet potatoes
2 tablespoons cornmeal
3 tablespoons olive oil
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon pepper
1. Preheat oven to 425 degrees F, line a cookie sheet with foil
2. Slice sweet potatoes into “fries”, making sure they’re all even sized
3. In a Ziploc bag (or sealable container), drizzle 2tbsp oil over fries, shake well
4. Sprinkle in corn meal, shake it until the fries are coated
5. Drizzle the rest of the oil over the fries, sprinkle with cinnamon, salt, and pepper, and shake it again!
6. Lay fires out on the cookie sheet in a single layer
7. bake for 25-40 minutes, flip half way through
