S’mores Cupcakes

Graham Cracker “Crust”
3 cups cinnamon graham crackers, crushed
1/2 cup granulated sugar
2/3 cup unsalted butter, melted
  1. combine crumbs and sugar
  2. add melted butter, mix well
  3. place 1 tablespoon of mixture in the bottom of the cupcake liners, and sprinkle some on top of the batter before baking to make the “crust”
Yellow Cake w/ Chocolate Chips & Mini Marshmallows (approx 30 cupcakes)
2 1/3 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspooon salt
1 cup butter, softened
1 1/4 cups granulated sugar
3 eggs
1 teaspoon vanilla
2/3 cup milk
1/2 cup chocolate chips
1 cup mini marshmallows
  1. preheat oven to 350 degrees F
  2. whisk flour, baking powder, salt together
  3. beat butter for approx 30 seconds or until creamy
  4. gradually add sugar, beat for 2 minutes
  5. add eggs one at a time, add vanilla,  beating well in between
  6. alternate adding flour mixture and milk to suagr mixture, starting and ending with flour, beat until just combined
  7. stir in chocolate chips and mini marshmallows
  8. bake for approx 20 min, or until toothpick inserted comes out clean
Chocolate Ganache
6 ounces semi sweet chocolate, chopped
1/2 cup heavy cream
  1. heat cream on stove top
  2. pour over chopped chocolate, stir until smooth
  3. let sit to thicken approx 10 minutes
  4. spoon over baked and cooled cupcakes
Fluff (marshmallow crème) Frosting
2 cups unsalted butter, softened
2 cups powdered sugar
1/2 teaspoon vanilla
1 (16oz) tub marshmallow Fluff
  1. beat butter until creamy
  2. beat in powdered sugar 1/4 at a time, beat until creamy
  3. beat in vanilla
  4. stir in Fluff
