Jello Shot Cupcakes

 White cake baked with Pinnacle Whipped Vodka, and jello. “Poked” with Jello/ vodka, and topped with CoolWhip/ vodka frosting
 
 
Jello “Poke”
1 box Jello (pick a flavor)
1 cup boiling water
1 cup Vodka
  1. stir Jello into boiling water until dissolved
  2. stir in vodka
 
 
Cupcakes– makes 24
1 box (18.25 oz) Pillsbury Moist Supreme White Cake mix
1/2 cup water
1/2 cup vodka (flavored?)
1/3 cup vegetable oil
3 eggs
1 (3.5 oz) box Jello (pick a flavor)
  1. pre-heat oven to 350 degrees F
  2. beat cake mix, vodka, vegetable oil, eggs together for 2 minutes on low-speed
  3. stir in jello
  4. fill cupcake tines 2/3 full, and bake for 16-20 minutes, until tops spring back or toothpick comes out clean
  5. while cupcakes are still warm poke holes in the tops, pour Jello “Poke” mixture over tops
  6. refrigerate 1 hour before frosting, and a total of 2 hours before serving
  7. refrigerate leftover “poke” mixture until set, then eat it.
 
 
CoolWhip Frosting
1 (8oz) tub of CoolWhip
1 (3.4 oz) box vanilla pudding
1/4 cup powdered sugar
1/2 cup milk, COLD
1/2 cup vodka, cold
  1. Combine pudding, powdered sugar, milk, vodka, beat for one minute
  2. let sit for 5 minutes
  3. fold in CoolWhip, and frost cupcakes immediately
