Irish Car Bomb Truffles

makes 50
 Crumbled Guinness Cake balled up with Bailey’s/ Jameson’s/ Chocolate Ganache, dipped in chocolate
Guinness Cake
¾ cup unsalted butter, room temperature
1 ¾ cups sugar
2 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
3 eggs
1 teaspoon vanilla
1 cup Guinness
¼ cup Half N Half (or whole milk)
+/- green gel food coloring
1. Preheat oven to 375 degrees F, line a 9×13 baking pan with parchment paper
2. Whisk flour, baking powder, and salt together
3. In a separate bowl Combine vanilla, Guinness, and Half N Half
4. In the bowl of a stand mixer beat butter & sugar together (on medium) until light & fluffy, approx. 2 minutes
5. Add eggs one at a time, beating between each addition
6. Alternate adding flour mixture & Guinness mixture to butter mixture, starting and ending with the flour
7. Beat on low until smooth, stir in green food color
8. Pour into prepared pan, and bake until toothpick inserted in the middle comes out clean, 30-40 minutes
9. Cool for a few minutes in the pan, then transfer to a wire rack and cool completely
Whipped Bailey’s & Jameson’s Chocolate Ganache
8 oz, semi-sweet baking chocolate, chopped
½ cup heavy cream
2 tablespoons unsalted butter
½ cup Bailey’s Irish Cream
2 teaspoons Jameson’s Irish Whiskey
1. Simmer butter and heavy cream together until butter is melted
2. Pour heated cream over chopped chocolate, stir until chocolate is melted
3. Add Bailey’s & Jameson’s, stir until combined
4. Chill in the fridge until cold
5. Whisk on medium speed until aerated/ lighter in color
To Make Truffles
Crumbled Guinness Cake
Whipped Ganache
4 cups chocolate chips
+/- colored candy melts for decorating
1. Crumble Guinness cake
2. Gradually add ganache to the cake crumbs until it all sticks together and holds shaped when rolled into balls (I used about 90% of the ganache)
3. Scoop and form into balls using a 1 ½ inch cookie scoop
4. Chill overnight (or at least 2 hours)
5. Melt 1 cup of chocolate chips at a time
6. dip the CHILLED cake balls into chocolate
7. allow to set/ harden on a wire rack
