Sugar Cookies with Amaretto Icing

Sugar Cookies
5 cups all-purpose flour
1 & 1/2 teaspoons baking powder
1 & 1/2 teaspoons salt
1 & 1/2 cups butter, softened
2 & 1/4 cups sugar
4 large eggs
1 tablespoon vanilla
  1. whisk flour, baking powder, and salt together
  2. in a separate bowl cream butter & sugar until fluffy
  3. beat eggs and vanilla into butter/ sugar mixture
  4. stir in flour mixture until incorporated
  5. chill for at least 1 hour (or overnight)
  6. preheat over to 400 degrees F, line cookie sheets with parchment paper
  7. roll out small amounts of dough (keep the rest in the fridge, or it’ll be almost impossible to use) to 1/4 inch thickness, on a lightly floured surface, cut into desired shapes
  8. bake for 6-8 minutes, or until edges are light golden brown
  9. cool on cookie sheets for 5 minutes, then finish cooling on wire racks
 
 
Amaretto Cookie Icing
2 cups powdered sugar
2 teaspoons Half & Half (or whole milk)
4 teaspoons Amaretto
4 teaspoons corn syrup
+/-  gel food color
  1. stir milk and Amaretto into powdered sugar
  2. beat in corn syrup, until smooth and glossy
  3. beat in food color
  4. pour into frosting bag, and using a small writing tip pipe the outline, then some in the middle and spread to the edges using the back of a spoon
  5. lay each cookie flat, and allow to dry for atleast 6 hours
