Dirty Girl Scout Cookies

Cookies– makes 42
2 sticks unsalted butter, softened
1 cup granulated sugar
1/2 light brown sugar, packed
2 eggs
1/2 teaspoon vanilla
2 teaspoons instant hot chocolate mix
2 cups all-purpose flour
2/3 cup baking cocoa
1 teaspoon baking soda
1 teaspoon salt
  1. pre-heat oven to 325 degrees F and line cookie sheets with parchment paper
  2. beat the butter, sugar, and light brown sugar for approx 3 min or until fluffy
  3. beat in eggs, vanilla, and hot chocolate mix until well mixed
  4. in a separate bowl whisk flour, baking cocoa, baking soda, and salt together
  5. gradually add (beat/ stir/ put your back into it) the flour mixture to the butter mixture, until it’s combined
  6. scoop by round tablespoonfuls on to cookie sheets
  7. bake for approx 10 minutes, or until the cookies flatten out
  8. cool on the cookie sheet for 10 minutes, then finish cooling on wire racks
2 1/2 cups powdered sugar
4 tablespoons Bailey’s Irish Cream
2 tablespoons Kahlua
2 tablespoons Creme De Menthe
42 Junior Mint candies
  1. combine powdered sugar and liqueurs in a medium bowl, whisk until well combined
  2. drizzle over cooled cookies (still on wire racks, with parchment paper underneath), press a Junior Mint into each cookie, drizzle more icing.
  3. let icing harden before stacking/ packing
