Bourbon Balls

makes approx 28
1 cup finely chopped toasted walnuts
2 cups crushed Nila Wafers (vanilla wafer cookies)
½ cup powdered sugar
2 tablespoons cocoa powder
1 ½ tablespoons corn syrup
¼ cup (60mL) Wild Turkey American Honey Bourbon
  1. Toast walnuts on a baking sheet at 350 degrees F for 8 minutes, cool completely, chopped
  2. Combine Nila Wafer crumbs and nuts
  3. Whisk together powdered sugar and cocoa powder, then add it to the crumbs/ nuts
  4. Add corn syrup and bourbon, mix well
  5. Chill for 30 minutes, then form into tablespoon sized balls
  6. Store in the refrigerator overnight (before serving, or putting into the cupcakes)
