Mimosa Blondies

leftover NYE champagne and orange zest in a Blondie base!
Makes 24.  Adapted from Boozy Baker Cookbook
2 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2 sticks unsalted butter, softened
2 cups packed light brown sugar
2 eggs
½ cup champagne
zest from 1 orange
1 ½ cups white chocolate chips
  1. Preheat oven to 350 degrees F, line a 9X13 baking pan with parchment paper, lightly grease & flour it
  2. Whisk flour, baking powder, and salt together
  3. In a stand mixer beat butter and brown sugar together until light and fluffy (about 2 minutes)
  4. Beat in eggs, one at a time, then add the champagne until everything is combined
  5. Gradually add the flour mixture until well combined, then stir in white chocolate chips
  6. Spread into prepared pan, then bake for 30-40 minutes, or until edges are golden brown and the middle is set
  7. Cool completely in pan on a wire rack, then cut into 24 bars
