Boozy S’mores

A chocolate cupcake baked with Pinnacle Marshmallow Vodka, and a graham cracker crust. Topped with chocolate & marshmallow vodka ganache. Finished off with  Fluff & marshmallow vodka buttercream frosting!
Graham Cracker Crust
3 cups crushed Cinnamon graham crackers
1/2 cup sugar
2/3 cup unsalted butter, melted
  1. combine crumbs and sugar
  2. add butter, mix well
  3. put a tablespoon of mixture into the bottom of each lined cupcake tin
*there will be some “crust” left over… check out the post for what I did with it!
Vodka Chocolate Caupcakes– made 36 cupcakes
2 sticks unsalted butter, softened
3/4 cup baking cocoa
1 cup Pinnacle Marshmallow Vodka
2 cups granulated sugar
1 cup sour cream
1 1/2 teaspoons vanilla
2 large eggs
2 cups all-purpose flour
3/4 teaspoon baking SODA
1/2 teaspoon baking POWDER
1/2 teaspoon salt
12 oz semi sweet chocolate chips
  1. pre heat oven to 350 degrees F, melt the butter on the stove top
  2. add vodka, sugar, and baking cocoa to the melted butter, whisk until smooth, bring to room temp
  3. whisk in eggs, vanilla, and sour cream
  4. combine baking soda, baking powder, salt, and flour
  5. gradually add flour mixture to wet ingredients, beat until well combined
  6. stir in chocolate chips
  7. fill lined (and crusted) cupcake tins 3/4 full, and bake for 15-17 minutes
Chocolate & Vodka Ganache
6 ounces baking chocolate, chopped fine
1/2 cup heavy cream
1 1/2 tablespoons Pinnacle marshmallow vodka
  1. simmer cream until almost boiling
  2. pour over chocolate, add vodka, whisk until chocolate is melted and smooth
  3. cool until slightly thickened
  4. spoon over cupcakes

Fluff & Vodka Buttercream
4 sticks unsalted butter, softened
2 cups powdered sugar
2 tablespoons Pinnacle marshmallow vodka
1 (160z) tub marshmallow Fluff
  1. beat butter until creamy
  2. add powdered sugar 1/2 cup at a time, beating in between each addition
  3. beat in vodka
  4. beat/ stir in fluff
