PB Cookie & Caramel Bars

Cookie Dough
1 cup unsalted butter, softened
1 cup white sugar
1 cup packed light brown sugar
2 eggs
1 cup peanut butter
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla
1 cups all-purpose flour
1 cup chocolate chips
1 cup peanut butter chips
Caramel Filling
11 oz caramels
14 oz sweetened condensed milk
4 tablespoons unsalted butter
2 tubes mini M&M’s
1. Preheat the oven to 350 degrees F, and line a 9×13 baking pan w/ parchment paper
2. Cream butter & both sugars together until light and smooth
3. Add eggs one at a time, beating in between each addition
4. Mix in peanut butter, then vanilla, until well combined
5. In a separate bowl whisk flour, salt, and baking soda together
6. Gradually add flour mixture to wet ingredients, stir until completely combined
7. Stir in chocolate chips & peanut butter chips
8. Chill the dough in the fridge while you make the caramel filling
9. Combine the unwrapped caramels, sweetened condensed milk, and butter in a sauce pan, and melt over med-low heat until combined and smooth
10. Take the cookie dough out of the fridge, spread 2/3 of it in the pan
11. Pour caramel filling over the cookie dough, and sprinkle with mini M&M’s
12. Then drop the remaining dough by the teaspoonful on to the caramel filling
13. Bake for 30 minutes, or until the cookie dough is baked thru and the edges are lightly browned
14. Cool completely, then cut into pieces
