Chocolate Peppermint Cookies

Makes 5 dozen, dough recipe from With Sprinkles On Top
2 cups all-purpose flour
2/3 cup cocoa powder
1 ½ teaspoons baking soda
½ teaspoon salt
1 cup unsalted butter, softened
1 cup sugar
2 teaspoons vanilla
2 eggs
1 ½ cups semi-sweet chocolate chips, melted
1 cup mini chocolate chips
1 (9.9 oz) bag peppermint M&M’s
1. Preheat oven to 350 degrees F, line baking sheets with parchment paper
2. Whisk flour, cocoa powder, baking soda, and salt together
3. Beat butter & sugar together until fluffy
4. Beat eggs, one at a time, into the butter/sugar, then add vanilla
5. Gradually beat/ stir in flour mixture, then melted chocolate chips until well combined
6. Stir in mini chocolate chips and peppermint M&M’s
7. Scoop cookies (using a 1 ½ inch cookie scoop) on to prepared baking sheet, flatten slightly
8. Bake for 8-10 minutes or until edges are set
9. Cool for a few minutes on the cookie sheet, then finish on a wire rack
