Irish Coffee Cupcakes

 
 
CAKE
1 box yellow cake mix
1 box chocolate pudding mix
3 eggs
3/4 cup Bailey’s
1/3 cup vegetable oil
1 teaspoon vanilla
     Mix cake and pudding mix. Whisk in remaining ingredients until smooth.  Bake at 325 degrees for 20-25 minutes, or until toothpick is clean.
 
FROSTING
1 stick unsalted butter, softened
1 lb powdered sugar ( i don’t own a kitchen scale… so I guessed and used approx 1/2 a bag)
1 tablespoon milk
3 tablespoons coffee (i made “strong” instant coffee and let it cool)
     Beat the butter. Gradually add powdered sugar. Add in milk & coffee until frosting is stiff but spreadable.
