Homemade Caramel Filling/ Sauce

From Cake Central- makes approx. 4 cups
 
1 cup unsalted butter, cut in to chunks
2 cups packed light brown sugar
1 cup light corn syrup
1 (14 oz) can sweetened condensed milk
2 tablespoons heavy cream
2 teaspoons vanilla
1 teaspoon salt
  1. In a heavy sauce pan over medium heat, bring butter, brown sugar, corn syrup, and condensed milk to a boil, stirring
  2. Stir in heavy cream and attach candy thermometer
  3. Stirring constantly, keep on medium heat until mixture reaches 238 degrees F/ soft ball stage
  4. Remove from heat, stir in vanilla & salt
  5. Transfer to a heat safe container to cool
