Capt & Coke Cupcakes

 
CAKE
1 box white cake mix
1 box vanilla pudding
4 eggs
1/2 cup water
1/2 cup Captain Morgan’s Spiced Rum
1/3 cup vegetable oil
1/2 teaspoon lime extract
      Combine cake and pudding mix. Add all other ingredients (the batter will be thick). Bake at 350 degrees F, until a toothpick inserted in the middle comes out clean.
 
FROSTING
1/2 cup butter
1/3 cup Coke
1 lb powdered sugar
1 teaspoon vanilla extract
     Mix butter and Coke in a large saucepan. Bring to a boil over medium heat. Stir until butter is melted. Remove from heat. Whisk in sugar and vanilla. This is more of a glaze than a frosting. it’s the same consistency as the frosting for those cinnamon buns from the refrigerated section of the grocery store. I hope that make sense…
