Red Headed Sl*t Cupcake Recipe

Yellow cake made with Jagermeister & peach schnapps, baked with “soaked” cranberries, and topped with Jagermeister/ peach schnapps/ cranberry juice buttercream.
Cranberry “Soak”
1 cup dried cranberries
1/4 cup Jagermeister
1/4 cup peach schnapps
  1. in a small bowl pour Jager & schnapps over cranberries, making sure to cover them all. “Soak” for at least 1 hour.
  2. drain, and chop cranberries, set aside
  3. +/- save leftover juice to “wash” your cupcakes in after you bake them!
Cupcakes– makes 27-30
1 (18oz) box white cake mix
1 (5.1oz) box instant vanilla pudding
4 large eggs
1/2 cup granulated sugar
1 cup vegetable oil
1/4 cup Jagermeister
1/4 cup peach schnapps
1/4 cup cranberry juice
1/2 cup water
  1. whisk cake mix, pudding, sugar together
  2. add wet ingredients, beat for approx 3 minutes or until well combined
  3. fold in chopped cranberries
  4. divide into lined cupcake tins, and bake at 350 degrees F for 15-20 minutes
Buttercream Frosting
2 sticks unsalted butter, softened
6 cups powdered sugar
2 tablespoons Jagermeister
2 tablespoons peach schnapps
2 tablespoons cranberry juice
+/-  gel food color
  1. combine Jagermeister, peach schnapps, and cranberry juice
  2. beat butter until creamy
  3. add 2 cups powdered sugar, beat until combined
  4. alternate adding Jager mixture and remaining powdered sugar, beat until well combined
  5. +/- add in food coloring, stir or beat on low until JUST incorporated
