Peanut Butter Cookie Dough Brownies

I wish I had thought this recipe up myself. I really do. The original recipe came from the Food Network site. Now, if I could only find a way to add booze to it, this recipe would be perfect.
I was a little worried when I first decided to try these out, but it’s not NEARLY as complicated as the recipe looks.
However, I did have a few issues getting the brownie layer out of the muffin tins. As usual. Every time I make brownies in the muffin tins they ALWAYS get stuck. I’m not sure if it’s the pan, the non-stick spray grease, or even the recipes I use.
I cooled the brownie layer for almost 40minutes, and then took them out of the muffin tins (and put them into paper cupcake liners) before I added the peanut butter cookie dough layer. The PB layer is kind of sticky, so I used my trusty 1.5” scoop and plopped some of the PB “dough” on top of the brownie. Then in a fit of genius (if I may so so), I used a butter knife lightly coated in flour to flatten it! I’m pretty proud of myself for thinking of that. 😉
After I got the peanut butter cookie dough layer on, I made the ganache. This was the first time I’ve made ganache without booze in it! After stirring for a while I noticed the chocolate chunks didn’t melt al the way, so I ‘nuked it for another 10 seconds. Still not melted all the way! So I just left it with a few very small chocolate chunks. I’ll say it’s because I wanted the extra texture, not because I was too lazy to keep ‘nuking. After spooning the slightly cooled ganache over the cupcakes, I sprinkled the chopped peanuts on top, and (TAAAAH-DAAAAH!) all done!
I could barely wait the hour these needed to set in the fridge before I dived in and ate one!
The original recipe from Food Network was for half of what I made, and the author put it in an 8×8 pan. I like to make mine in the muffin tins, because they’re easier to share and package for the people I force feed sweets to on a weekly basis…

Running Fall & Gym Annoyances

Fall Down. Ouch?
I’ve been running outside 2 or 3 times a week since September, when I started the CouchTo5K plan.  Go me. If you don’t know, I have a Love/Hate relationship with running. I don’t particularly enjoy it, but If I miss a day I feel guilty. I’m also a bit clumsy. I mean, I can trip on air, I constantly bump into things, and I usually manage to burn myself or spill something at least once a week. So,running outside and clumsy… 2 things that don’t usually go well together. That being said, since September I hadn’t fallen once. Until last Friday. Lucky for me the only thing seriously hurt was my pride. As I sat there on the sidewalk, doing an inventory (pain, no. phone, whole. watch, not broken. sunglasses, just a few feet away)… I had to laugh. I just imagined what the people driving by must have seen… me (windpants, jacket, gloves, puffy vest) cartwheeling through the air, skidding a foot on the sidewalk… I would have laughed if I was driving by. Just sayin.
So… my first fall was pretty traumatic, but when I finished the run (50 minutes, 5.08 miles, 9’50” pace) I realized how lucky I was. I was wearing layers so my knees only got bruised/ slightly skinned (no blood). I only got 2 small holes in my pants, and a BIG hole in my glove. I didn’t break/ strain/ pull/ tear any bones/ muscles. I wore my contacts & cheap sunglass, so my “good” frames didn’t go flying off and get ruined. I didn’t land on my cellphone OR my GPS watch…
As bad as my pride was hurt… I’m glad I got my first running fall over with. Now all I can do is hope it doesn’t happen again for a loooooooong time.
Oh… and the only thing that convinced me to finish that run was The Bollox followed by Nirvana, Cake, Trapt, Dropkick Murphy’s, and the other rockin tunes that made my playlist that day.
Annoyance in the Gym
I should preface this rant by  clarifying something- When I say “gym” I mean the “fitness center” at my apartment complex. It’s pretty basic, a nautilus machine, 2 treadmills, stationary bike, elliptical, and a few medicine balls…
I dislike January at the gym. There are always a ton of people getting their NY Resolutions in. It’s a total bother. I know that makes me sound like a total gym rat, but so be it. In general it bugs me when there are too many people in the gym. I always feel like I have to rush through my routine, or hurry to claim my favorite treadmill. Not to mention the enclosed space with all those (potential) virus/ common cold/ flu carriers. *shudder* I go to the gym everyday at the same time, and it always messes up my flow when there are to many other people there…
I think it’s partly because I feel like people are wicked judgey. I don’t particularly want to know if that guy is staring at my ass in a good way.. or a bad way.
Yesterday… the lady who cleans the “fitness center” in my apt complex talked to me for (at least) 30 minutes while I was trying to get my workout in. I got to hear half her life story, why she hates working for the apt complex, and got admonished for not having children yet. All I wanted to do was workout. Seriously… unless it’s an emergency, don’t talk to me until I stop doing whatever I was doing. If I had lost count of my reps one more time I might have screamed! I mean, she’s a nice lady, and probably just wanted someone to talk to…but DAMMIT, I’m not the kind of person who tells someone to leave them alone. Then she cleaned the treadmill belt as I was getting on it. REALLY.
One more thing… I really dislike people who listen to music w/o headphones while they’re working out, while other people ar in the gym. It’s rude. I don’t want to hear whatever kind of crap music motivates you, just like I’m sure you don’t want to hear the crap I listen to. Invest in a pair of headphones. Or listen to me heavy footing the treadmill and deep breathing during my yoga & stretching. I ALWAYS put my headphones in when someone else is working out. If you need an extra pair I have one…
Eeeh, (kinda) sorry if that rant was snarky.

Cookies & Cream Cupcakes II

January has been my month to “tweak” some of my favorite recipes. This week I picked these Cookies & Cream Cupcakes. I used boxed mix in the original version, but this time I really wanted to make it “homemade”. (Blog Post Here)
When I made these the first time, I layered the crushed Oreo’s in the bottom, this time I stirred them into the batter… I wanted cookies in EVERY bite!
Instead of using the mini Oreos in the frosting I saved 10 (ok, ok, it was 9 because I ate one) of the Double Stuf cookies for the frosting.
I also used a bit of milk, and less vodka in the frosting… it tastes great with all vodka (and no milk) if you want, but I think the milk helps make the buttercream a little fluffier. Or that could be all in my head, I’m not really sure. 😉
This version is definitely my favorite of the two. I like that the cake is moist, but still pretty firm. And the extra cream from the Double Stuf Oreos in the frosting is perfect.
Lastly… I’d like to point out how ADORBS those cupcake liners are! I love penguins! They’re made by Reynolds (like the tin foil), and they’re “no fade”. AND I found them at the grocery store! Woot!

Cookies & Cream Cupcakes II recipe

Chocolate Caramel Cupcakes AND Adult PB&J Cupcakes

It’s been about a year since I started blogging about baking. So I decided to “celebrate” by baking my favorite cupcakes for the month of January.  I didn’t bake the weekend of the first… I was “baked out” from all those Christmas cookies! And I was too lazy to post these Caramel Chocolate cupcakes from last week. Er… Honestly…  I got distracted by some online shopping. THEN A Memory of Light came out (Wheel of Time, Robert Jordan & Brandon Sanderson).  I’ve waited (what feels like) forever for the book to come out, so I HAD to read and finish that…
Any ways… Last week I made Chocolate Caramel Cupcakes. Because, seriously… you can’t go wrong with chocolate cake (with Bailey’s), and caramel buttercream (with caramel Bailey’s)! I used the Milky Way Cupcakes recipe and subbed regular Bailey’s (I didn’t have enough caramel Bailey’s for the cupcakes & the frosting).
I used my new silicone liners for the first dozen. I was hoping that they wouldn’t, but the cupcakes stuck to the silicone pretty bad… I think it might have been because they are so moist? *shudder* I hate that word. I’m planning some experimenting with them in the near future. 😉
This week I did a different version of the Adult Peanut Butter & Jelly cupcakes. I modified the Peanut Butter Cupcake recipe (so I could use the vodka), and the frosting recipe from the first version of the Adult Peanut butter & Jelly Cupcakes.
I skipped filling them with the Reese’s Cups this time because it I don’t think it was necessary last time. Make sense? This peanut butter cupcake tastes great without the added Reese’s. I filled the cupcake  liners practically all the way full… and they rose up JUST like I wanted them to! I love when that happens.
The buttercream frosting wasn’t as fluffy as I wanted, and I had a bit of trouble getting the taste JUST right. I think it might still need some tweaking… maybe another tablespoon of peanut butter next time…
