Irish Soda Bread

adapted from
4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter, softened
1 cup buttermilk
1 egg
¼ cup unsalted butter, melted
¼ cup buttermilk
1. Preheat oven to 375 degrees F, grease a baking sheet
2. Whisk flour, sugar, baking soda, baking powder, and salt together
3. On low speed (in a stand mixer) add softened butter until mixture is crumbly and there are no large chunks of butter
4. In a separate bowl gently whisk egg and buttermilk together
5. Add buttermilk/ egg to butter/ flour mixture
6. Using the dough hook attachment on low speed, mix it together until almost all combined
7. Knead the remaining crumbs into the dough (until the crumbs are gone)
8. Divide into 2 rounds cut and X in the top, brush with ¼ cup melted butter & ¼ cup butter milk
9. Bake for 30-40 minutes, or until a toothpick inserted in the middle comes out clean
