Southern Comfort Red VelvetCupcakes

Cake
3 cups CAKE flour
4 tablespoons cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1/4 cup SoCo
1 teaspoon vanilla extract
1 teaspoon white vinegar
1 ounce (1 bottle) red food coloring
12 tablespoons (1 3/4 sticks) unsalted butter, softened
2 cups granulated sugar
3 large eggs
  1. Whisk cake flour, cocoa powder, baking soda and salt together.
  2. In another bowl whisk the buttermilk, SoCo, vanilla, vinegar, and food coloring together.
  3. In another (large) bowl beat the butter, gradually add sugar, beat for 3 min.
  4. Add eggs, one at a time. beat well.
  5. Alternate adding the flour mixture and SoCo mixture, starting and ending with the flour mixture. (flour, SoCo, flour, SoCo, flour).
  6. Fill cupcake tins 3/4 full and bake at 350 degrees for approx 20 minutes.
 
 
Frosting
14 tablespoons (1 3/4 stick) unsalted butter, softened
6 cups powdered sugar
1/4 cup milk
1/4 cup SoCo
  1. Beat butter for about 2 minutes.
  2. Mix SoCo & milk together.
  3. Slowly add powdered sugar, alternating with milk/SoCo mixture, starting and ending with the powdered sugar.
