No Machine S’mores Ice Cream

2 cups heavy whipping cream
5 oz semi-sweet baking chocolate, melted
1 (14oz) can sweetened condensed milk
3 tablespoons cocoa powder
1 cup Fluff (marshmallow crème)
Honey Cinnamon Cookie Dough (recipe below)
12 marshmallows, ripped into chunks
¾ cup chocolate chunks
1. Chill the bowl from the stand mixer for at least 30 minutes
2. Using the whisk attachment whip the cream until stiff peaks form (5 minutes?), chill in the fridge while you do the next 2 steps
3. Mix melted chocolate, sweetened condensed milk, and cocoa powder until combined and smooth, cool to room temperature
4. Combined cookie dough crumbles, marshmallows, and chocolate chunks
5. Gently fold whipped cream into the cooled chocolate mixture until about 75% combined
6. Pour half of combined chocolate & cream into a large freezer safe container, stir in half of the Fluff and have of the cookie dough mixture
7. Repeat w/ the remaining ingredients, then freeze for 4-6 hours or until set
Honey Cinnamon Cookie Dough
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
1 stick unsalted butter, softened
½ cup packed light brown sugar
¼ cup honey
1. Whisk flour, baking soda, cinnamon, and salt together
2. Cream butter, light brown sugar, and honey, until light and fluffy
3. Combined dry and wet ingredients, knead until slightly crumbly
