Beer Mac N Cheese

8 oz chicken, cooked and diced
2 ½ cups (9oz) uncooked elbow noodles
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
8 oz 2% milk
8 oz Miller 64 beer
8 oz RF cheddar cheese, shredded
5 oz parmesan cheese, shaved
3 oz RF jalapeño cheddar cheese, shredded
Pinch paprika
Pinch pepper
½ cup panko breadcrumbs
1. Preheat oven to 375 degrees F
2. Cook elbow noodles to al dente
3. Heat a sauce pan over med-high heat & melt the butter, whisk in flour then cook until bubbly and golden brown, approx. 2 minutes
4. Add milk & beer to the sauce pan, then the cheeses, continue stirring until cheese is melted
5. Reduce heat to medium and cook for another 6 minutes, or until the mixture is a little bit thicker
6. Stir pepper and paprika into melted cheese
7. Combine chicken & cooked elbows into a 8X8 casserole dish, pour cheese over the top and stir to combine
8. Sprinkle the breadcrumbs over top, then bake for 25 minutes, or until the top is golden brown
