Drunken Turtle Cookies

Makes about 4 dozen
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter, softened
¾ cup white sugar
¾ cup packed light brown sugar
2 eggs
3 tablespoons Bailey’s Irish Cream
1 teaspoon vanilla extract
1 (12oz) bag mini chocolate chips
3- 3 ½ cups pecans, soaked in water for 5 minutes
1 (11oz) bag of caramel candies
4 tablespoon Bailey’s Irish Cream
1. Preheat oven to 350 degrees F, line cookie sheets with parchment paper
2. Whisk flour, baking soda, and salt together
3. In a stand mixer, beat butter and both sugars together until smooth
4. Beat in eggs, one at a time
5. Gradually stir in flour mixture
6. Add Bailey’s and vanilla, stir until combined, then stir in chocolate chips
7. Place 5 pecans in a circle on the cookie sheet, then using a 1 ½ inch scoop place a scoop of cookie dough in the middle and flatten slightly
8. Bake for 8-10 minutes or until cookies are browned on the edges, cool on the pan for 5 minutes and finish cooling on wire racks
9. Combine the Bailey’s and UNWRAPPPED caramels and melt in the microwave for one minute, stir, and continue to melt in 10 second intervals (stirring in between) until mixture is smooth
10. Allow to cool slightly, then drizzle over cookies
