Grand Marnier Madeline Cookies

Madeline Cookies– makes 24-26
¼ lb (1 stick) unsalted butter, melted
1 cup all-purpose flour
½ teaspoon salt
2/3 cup sugar
3 eggs
3 tablespoons Grand Marnier
½ cup mini chocolate chips
+/- zest from 1 orange
1. pre-heat oven to 375 degrees F, grease & flour a Madeline pan (I used a shiny aluminum one)
2. Combine flour and salt
3. Beat eggs and sugar together, until light (about 2 minutes)
4. Gradually add flour mixture to sugar mixture until incorporated
5. On med/low speed beat in melted butter, Grand Marnier, and orange zest until batter is smooth
6. Gently stir in chocolate chips
7. Drop one heaping tablespoonful of batter into each cavity
8. Bake for 10 minutes, or until a toothpick inserted into the middle of a Madeline comes out clean
9. Immediately remove from pan, and cool completely on a wire rack
10. Dip shell side into frosting/glaze(recipe below), allow to harden before stacking…
 
Glaze
1 ½ cups powdered sugar
3 tablespoons Grand Marnier
+/- 1 teaspoon unsalted butter, melted
+/- 1 teaspoon vanilla
1. Combine all ingredients, whisk (or beat) until smooth
