Sausage & Corn Chowder

Adapted from Lemons For Lulu. Makes about 9 cups.
 
1 lb sweet Italian pork sausage
1 ½ teaspoons minced garlic
½ cup diced onion
3 tablespoons flour
¼ teaspoon thyme
¼ teaspoon rosemary
Salt & Pepper to taste
4 cups reduced sodium chicken broth
2 ½ cups shredded hash browns (frozen)
2 2/3 cups frozen corn
1 (12oz) can evaporated milk
1 cup shredded low-fat white cheddar cheese
1. Brown sausage in a large pot, then stir in garlic and onions & cook until done
2. Drain the fat, sprinkle with flour and add thyme, rosemary, salt & pepper, cook for 1 minute
3. Add the chicken broth, shredded hash browns and corn to the pot, bring to a boil then cover & cook on low for 15 minutes
4. Add evaporated milk and cheese and serve immediately
 
2382 calories total, approx. 265 per cup
