Spicy Chicken & Broccoli Alfredo

1 ½ lbs chicken breast
Cajun seasoning
1 (1lb) box Gemelli (shape) Pasta
 
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
1 teaspoon salt
½ teaspoon pepper
½ teaspoon crushed red pepper
3 cups 2% milk
 
1 ½ cups ( about 6oz) broccoli florets
½ cup shaved parmesan cheese
1. Season chicken breasts w/ Cajun seasoning, cook and dice
2. Cook pasta to al dente
3. Melt butter with salt, pepper and crushed red pepper in a large skillet over medium heat
4. Whisk flour into butter, continue whisking for 5 minutes to form a thick paste
5. Slowly pour in milk and continue whisking for another 5 minutes
6. Stir in chicken, broccoli, and pasta, continue cooking for another 5 minutes, or until sauce is thickened, and broccoli & pasta are desired tenderness
7. Stir in parmesan cheese and serve
 
3480 calories total, makes 10 cups (348 calories each cup).
