Cowboy Crockpot Breakfast
Adapted from Foodie Army Wife 1 bag (9.6 oz) turkey sausage crumbles 6 (37oz total) red potatoes, cut into 1.5 inch cubes 1 (6oz) red onion, diced 1 poblano pepper, diced 6 eggs 1/8 cup 2% milk 1 teaspoon salt 1 teaspoon pepper 3 oz shredded RF colby jack cheese 1. Combine sausage, potatoes, onion, and poblano pepper in a lightly greased slow cooker 2. Cook on low for 6 hours 3. Beat eggs and milk together, stir in salt and pepper, pour over sausage/ potato mixture (in slow cooker) 4. Cook for another hour (or until eggs are set) 5.
