Sweet & Salty Cookies!!

Sometimes I crave sweet AND salty things. Yesterday was one of those days. It also happened to be Sunday, which is my favorite baking day. Coincidence? I think not.
There are variations of these sweet and salty cookies all over the internet.  I even saw some with potato chips! Crazy… riiiiight? I opted to make mine w/ pretzels because… well… I like pretzels. I also like Reese’s and all kinds of chocolate. Basically these cookies are a little bit of heaven for me. Pretzels, 2 kinds of chocolate chips, peanut butter, and salt… what more could a girl ask for!?
I used half of my favorite chocolate chip cookie recipe. Then I added the pretzels. Then I saw the 2 bags of chocolate chips… and added those. THEN I noticed that I had a bag of those adorbs mini Reese’s in the pantry… and I just couldn’t control myself. To top it all off I sprinkled a little bit of coarse salt over the cookies.
I added the extra pretzels & chocolate chips because I thought it looked pretty to have them sticking out on the top… it really shows the sweet & salty off, ya know!? You could leave it all off, but I wouldn’t recommend doing that. I added the extra salt when they came out of the oven ‘cuz I didn’t get quite enough the first time. It all depends on what you like!
That’s the great thing about these cookies. They start off as a basic chocolate chip cookie, and then you add as much of the extra stuff as you want.
If I was you I’d make these the next time a sweet & salty craving hits. It sure cured mine. 😉

Chocolate Peppermint Cookies!!

These Chocolate Peppermint cookies are just one of the things I worked on in the kitchen today. I’m planning on sharing the rest over the next few days.
I used the same dough as the Thin Mint or Tagalong Stuffed Chocolate Cookies. I doubled the recipe from With Sprinkles On Top. It’s my favorite chocolate cookie dough that I’ve made (so far).
The only problem I had when I was making these is getting the melted chocolate chips combined into the rest of the dough. I think I’ll add it to the after I add the eggs/ vanilla next time. Or maybe I’ll use baking chocolate instead…
When the 8 minute mark comes up, and you’re ready to take these out of the oven, don’t worry if the cookies don’t look done in the middle… they will be. They’ll finish cooling and set up on the cookie sheet.

Some of the other things I worked on today are: Hot Cocoa Mix, Peppermint Infused Vodka, Cookie Dough Fudge, and Cookie Dough Candy Cane “Pops”.  I’ll (hopefully) be sharing them (at some point) soon.

Homemade Copycat Oreos and SnickerDoodles!

I love Oreos. They were my favorite snack when I was a kid. Mom used to keep them in this Tupperware (actual Tupperware) container, and about halfway thru the bag they’d start to get a little stale… because that was before they made the bags that seal themselves. But honestly… I still eat my Oreo’s a little stale.
These… are not stale. And they’re not quite Oreos. My cookie is a little sweeter and not as crunchy and the cream isn’t as sturdy. It kinda squishes out when you bite into the cookie. I think that because the cookies aren’t crispy it makes the cream seem less sturdy. Does that make sense?
The cookie is adapted from a chocolate roll out recipe on AllRecipes (and the same recipe I used to make the cookies last week). I used a small biscuit cutter to cut ut my cookies, so they’re slightly bigger than regular Oreos.
The Oreo Cream recipe is from FoodNetwork.com. Would you believe me if I told you that I’ve NEVER used shortening before? It always kind of grossed me out. I’m not really sure why… I think ‘cause it’s like a giant tub of fat/ grease. Kind of like the drippings from bacon. :::Shudder::: I got over it ‘cause I couldn’t find an Oreo Recipe that DIDN’T use it. I assumed it was important.
Hubs told me this homemade version is better than regular Oreos. I like them the same. Click HERE to see my RECIPE!

I also made these Snicker Doodles (w/ Snickers!) from Picky Palate.
I changed 2 things:
1) I used 12 fun sized Snickers
2) I keep a cinnamon & sugar mix in the pantry (it’s probably ¼ cinnamon & ¾ sugar). I used a tablespoon to scoop the cookies, rolled them into balls, then tossed them in the mixture.
They are aaaaaaah-maaaaaaaazing.
You should go bake one (or both) of these recipes. Right. Now.

Red Hot Cookies w/ Goldshlager Frosting

Seriously, I LOVE these cookies. I love cinnamon. I also have an… umm… affection of Goldshlager that dates back to my college/ partying days.
When I saw these on Mom’s Test Kitchen last year… this happened: “SQUEEE! Cinnamon! Valentine’s Day! Sprinkles! Pretty!”
Followed by this: “Cinnamon! GoldShlager! NomNom FROOOSTING!”
I changed the recipe a VERY small amount, and added the frosting. I used Hot Tamales because I couldn’t find “Red Hots”, but I’m pretty sure they’re the same thing. I also tried to find those little cinnamon heart-shaped candies, but I haven’t seen those since I was a little kid.
At the risk of sounding weird (and un-baker-y) today was the first time in my life I ever used corn starch. And I learned that you can use it to make “homemade” cake flour. Yup, I totes got excited about that.
When I made the frosting I didn’t want to cream it, so I melted it most of the way in the microwave. When I say “most of the way” what I mean is microwave for about 10 seconds until it is liquidy, but not yellow and clear. If you melt it all the way the frosting will be thinner (more like an icing). If you don’t melt it enough it will be too thick to whisk. I dipped the tops of the cookies directly into the frosting/ icing when I made it… mostly because I was too lazy to find a knife to spread it.
But the number one reason I love these cookies is the texture. They’re the perfect bite sized cakey cookie! The dough is delish, I’m already thinking about other cookies I can make with it… pretty much anything with candy in it. Or maybe cereal box cookies…
