Carrot Crunchies

2 cups whole wheat flour
1/2 cup oats
1 egg
1/2 cup cornmeal
1/2 cup water, HOT
1/3 cup vegetable oil
1/2 cup carrots, grated fine
  1. pre-heat oven to 350 degrees F
  2. combine all ingredients to form dough
  3. roll out to 1/4 inch thickness on floured surface, cut into shapes with cookie cutters
  4. bake for approx 20 minutes, or until crispy
