Dark Chocolate Roll Out Cookies

1 ½ cups all-purpose flour
¾ cup dark cocoa powder
1 ¼ teaspoons baking powder
1/8 teaspoon salt
¾ cup unsalted butter, softened
1 ¼ cups sugar
1 egg
1. Whisk flour, cocoa powder, baking powder, and salt together
2. Cream butter and sugar together until fluffy
3. Stir in dry ingredients until combined (will be kind of crumbly)
4. Chill for 2 hours (or overnight)
5. Preheat oven to 375 degrees F, and on a lightly floured surface roll out the dough to 1/8 inch thickness
6. Cut into desired shapes and place about 1 inch apart on cookie sheets
7. Bake for 6-8 minutes, then cool on the baking sheet for 5 minutes before transferring to wire rack to finish cooling
