Chocolate Inside Out Caramel Apples

6-7 apples
Lemon juice
2 bags chocolate chips (or candy melts), melted
1 ¼ cups caramel
1. Cut the apples in half, scoop out the core with a spoon (melon baller, ice cream scoop), leave ½ – ¼ inch wall
2. brush all over the apples with lemon juice, let set
3. Pat the apples dry, then squish caramel inside the cavity
4. Refrigerate for 20minutes, or until the caramel is firm
5. Cut each half into 4 slices, coat the apple edges with lemon juice, pat dry
6. Dip each slice into the melted chocolate, then place on wax paper and allow the chocolate to harden
