Taco Pasta

adapted from Cravings of a Lunatic.
1lb lean ground beef
6 oz reduced sodium beef broth
1 tablespoon taco seasoning
1 tablespoon minced garlic
16 oz tomato sauce
1 bell pepper, chopped
4 oz red onion (about ½ an onion), chopped
2 oz LF cream cheese
3 oz (about 1 cup) LF shredded cheese
1. In a skillet, brown the beef, drain it, put it back in the skillet
2. Add beef broth, taco seasoning, minced garlic, and tomato sauce, bring to a boil over med-high heat
3. Reduce to medium heat, add peppers & onions, cook for about 5 minutes (or until pepper/onions reach desired “doneness”)
4. Add cream cheese, stir until melted
5. Stir in pasta & shredded cheese, and then serve!
1856 calories total. Makes 7.5 cups w/ 247.5 calories per cup!
