Chicken Parmesan

1 lb chicken breast cutlets
½ cup panko breadcrumbs
1 egg, beaten
1 tablespoon olive oil
4 oz mozzarella cheese, sliced thin or shredded
1 ½ cups spaghetti sauce
1. Pour egg and breadcrumbs into separate shallow dishes
2. Dredge each cutlet in the egg then the breadcrumbs
3. Heat olive oil in a large skillet, then add the cutlets
4. Cook until bread crumbs are browned & chicken is ALMOST done
5. Add spaghetti sauce to skillet, then sprinkle cheese on top of the cutlets, cover
6. Cook on low heat until the sauce is warm, the cheese is melted, and the chicken reaches an internal temp of 165 degrees F
