Skillet Steak Enchiladas

1 ¾ lbs steak, sliced into strips
2 tablespoons olive oil
4oz red onion, diced (about ½ onion)
1 jalapeno, diced
1 (10oz) can enchilada sauce (I used Chi-Chi’s medium)
1 (14oz) can diced tomatoes
1 (8.75oz) can corn
4oz (about 2 cups) crumbled tortilla chips
6oz (about 1 ½ cups) shredded cheese
1. Pour oil in a large skillet, sauté steak for about 5 minutes, drain fat and return to skillet
2. Add onion, jalapeno, and corn to the skillet, cook until tender
3. Add enchilada sauce and diced tomatoes, simmer over med-high heat until hot
4. Add crumbled tortilla chips and cheese, reduce heat to low and cover with a lid until the cheese is melted
 
Makes about 53 ounces with 2515 calories total.
