The Elvis Cupcake

Chocolate chip banana cake topped with peanut butter buttercream and garnished with chocolate covered bacon.
Makes 22.
 
Cupcakes
¾ cup unsalted butter, softened
1 ½ cups sugar
3 eggs
1 teaspoon vanilla
¾ cup buttermilk
1 cup (3 medium) mashed ripe bananas
2 ½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking SODA
1 teaspoon baking POWDER
1 bag semi-sweet chocolate chips
1. Preheat oven to 350 degrees F, line cupcake tins with paper liners
2. Cream butter, sugar, and eggs together
3. In another bowl whisk together flour, salt, baking soda, and baking powder
4. Combine buttermilk & vanilla
5. Alternate adding flour mixture & buttermilk to the creamed mixture, starting and ending with flour
6. On medium speed beat in mashed bananas
7. Stir in chocolate chips
8. Fill cupcake liners ¾ full, and bake for 20-25 minutes, or until toothpick inserted in the middle comes out clean
9. Cool on a wire rack before frosting
 
Peanut Butter Buttercream
½ cup unsalted butter, softened
1 cup creamy peanut butter
2 tablespoons milk
2 cups powdered sugar
1. Beat butter and peanut butter together until smooth and light
2. Alternate adding powdered sugar and milk, starting and ending with powdered sugar
