My Homemade Granola

 makes approx. 8 cups
¼ cup unsalted butter
¼ cup packed light brown sugar
¼ cup honey
¼ cup real maple syrup (not the fake pancake/ waffle stuff)
3 ½ cups oats
1 cup sliced almonds
1 cup peanuts, very coarse chopped (leave big chunks)
1 ¼ cup Rice Krispie cereal
½ cup raisins
½ cup dried cranberries, very coarse chopped (or not at all)
¼ cup mini chocolate chips
+/- ground cinnamon
1. Preheat oven to 325 degrees F, grease a large baking sheet (make sure it has edges, so your granola won’t fall out)
2. Combine butter, brown sugar, maple syrup, and honey in a sauce pan, melt over low heat until gently bubbling, then stir continuously for 2 minutes
3. In a large bowl combine oats, nuts, and Rice Krispies
4. Pour butter mixture over oat mixture then stir until everything is coated
5. Spread evenly in the baking pan, and sprinkle with cinnamon
6. Bake for 30-40 minutes, stirring every 10 minutes
7. Remove from oven when granola is golden brown and crispy, stir in raisins & cranberries
8. Sprinkle the mini chocolate chips over the top, allow them to melt, then stir again
9. Finish cooling, store in an airtight container in the fridge
