Skillet Lasagna

Adapted from the Spiffy Cookie
 
1 teaspoon minced garlic
½ lb 96% lean ground beef
14 oz spaghetti sauce
1 cup water
½ tablespoon Italian seasoning
¼ teaspoon salt
¼ teaspoon pepper
7 lasagna noodles, broken into pieces
8 oz ricotta cheese
4 oz (about 1 cup) mozzarella cheese, shredded
1. Cook beef and garlic until browned, drain and return to skillet
2. Stir in spaghetti sauce, water, and seasonings, bring to a boil
3. Add broken lasagna noodles, return to a boil, decrease the heat to low, then cover and cook until the noodles are almost done (about 15-20 minutes)
4. Stir in the ricotta, put the cover back on, and cook for 5 more minutes
5. Remove from heat, stir in ¾ of the mozzarella, sprinkle the rest on top and serve
