Adult Peanut Butter & Jelly Cupcakes II

peanut butter cupcakes baked with Pinnacle Grape Vodka,
topped with vodka/ jelly/ pb buttercream
Cupcakes– makes approx 24-26
2 cups light brown sugar
½ cup oil
½ cup applesauce (sugar-free)
1 cup peanut butter
2 eggs
2 teaspoons lemon juice
1 teaspoon vanilla
1 cup whole milk
½ cup Pinnacle Grape Vodka
2 ½ cups all-purpose flour
1 teaspoon baking soda
pinch of salt
1 bag (10oz)  peanut butter chips
1.      pre heat oven to 350 degrees F
2.      on low-speed beat brown sugar, applesauce, oil, and peanut butter until combined
3.      beat in eggs one at a times, then beat in vanilla and lemon juice
4.      whisk flour, baking soda, and salt together
5.      alternate adding flour mixture and milk/vodka to brown sugar mixture starting and ending with flour
6.      beat until well combined/ smooth making sure to scrape sides
7.      stir in peanut butter chips
8.      fill lined cupcake tins 3/4 full (or slightly more)
9.      bake for 15-20 minutes
3- 4 cups powdered sugar
1 cup (2 sticks) unsalted butter, softened
2 tablespoons Pinnacle Grape (flavored) Vodka
3 tablespoons grape jelly
1 tablespoon peanut butter
  1. cream butter
  2. add 2 cups powdered sugar, vodka, jelly,and peanut butter beat until smooth
  3. gradually add remaining powdered sugar until desired consistency/ taste (I used 3 ¼ cups)
