Captain Morgan & Coke Cupcakes II

Coke Cake
4 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2/3 cup unsalted butter, softened
1 1/2 cups Coke
1/2 cup Captain Morgan’s
4 eggs
  1. pre-heat oven to 350 degrees
  2. combine dry ingredients
  3. add wet ingredients, beat on LOW for 30 seconds
  4. beat on MED speed for 2 minutes
  5. bake 20-25 minutes
 
 
Captain Morgan’s Filling
1 stick unsalted butter, softened
1 lb powdered sugar
1 teaspoon vanilla extract
6 tablespoons Captain Morgan
  1. cream butter
  2. add half powdered sugar, and beat
  3. add vanilla and half of Capt, beat
  4. alternate adding powdered sugar, and Capt, until filling is desired consistency & taste
 
 
Captain & Coke Frosting
1 stick unsalted butter, softened
1lb powdered sugar
3 tablespoons Captain Morgan
3 table spoons Coke
  1. mix Capt & Coke
  2. cream butter
  3. add half powdered sugar, and beat
  4. add half of Capt/ Coke mixture, beat
  5. alternate adding powdered sugar, and Capt/Coke, until frosting is desired consistency & taste
