Coffee Dry Rub & Kahlua BBQ Slow Cooker Pulled Pork

Coffee Dry Rub
1/3 cup light brown sugar
3 tablespoons ground coffee
½ tablespoon onion powder
½ tablespoon garlic powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon chili powder
½ teaspoon pepper
½ teaspoon crushed red pepper
½ teaspoon thyme
Kahlua BBQ Sauce
½ cup coffee
2/3 cup ketchup
½ cup + 2 tablespoons Kahlua
1 tablespoon minced garlic
½ cup light brown sugar
1/3 cup sweet chili sauce
1 tablespoon soy sauce
½ teaspoon ground cinnamon
2 teaspoons chili powder
1 teaspoon salt
2 shallots, diced
BBQ Pulled Pork
Coffee Dry Rub
Kahlua BBQ Sauce
3+ lb pork butt, trimmed of fat
  1. combine dry rub ingredients, then rub all over pork butt
  2. place pork butt into slow cooker
  3. combine Kahlua BBQ Sauce ingredients, and pour over pork butt
  4. cook on low for 6-8 hours until pork is easy to shred
  5. transfer shredded pork & all the liquid into a large sauce pan, bring to a boil, and then simmer for 30 minutes, or until sauce is reduced to desired thickness
