Cookies N Cream Cupcakes

Cupcakes- makes approx 30
1 (18oz) box white cake mix (I used Pillsbury Moist Supreme Classic White)
1 (5.1oz) box vanilla pudding mix
4 eggs
1/2 cup granulated sugar
1 cup vegetable oil
1/2 cup Pinnacle Whipped Chocolate vodka
3/4 cup water
30 Double Stuf Oreos, chopped coarse
  1. Pre-heat the oven to 350 degrees F
  2. whisk cake mix, pudding mix and sugar together
  3. add eggs, vegetable oil, vodka, and water, beat on low-speed for 3 minutes, or until smooth and well combined
  4. put crushed Oreo cookies in the bottom of lined cupcake tins, fill 3/4 full with batter
  5. bake for 15-20minutes, until toothpick inserted in middle comes out clean
  6. +/- brush with vodka!
Oreo & Chocolate Vodka Buttercream
4 1/2 cups powdered sugar
1 1/2 cups unsalted butter, room temp
6 tablespoons Pinnacle Whipped Chocolate vodka
1 (8oz) bag Mini Oreos, leave 30 whole to use as garnish, crush the rest
  1. cream the butter, add 2 cups powdered sugar, beat
  2. add 4 tablespoons vodka, beat
  3. add 1/2 crushed Oreos, beat
  4. gradually add in powdered sugar 1 cup at a time, alternating with tablespoons of vodka, until frosting reaches desired consistency/ flavor
  5. add remaining crushed Oreo’s to desired flavor
