PB&J Cinnamon Rolls

Adapted from In Jennie’s Kitchen & Runs With Spatulas. Makes 16.
 
Dough
2 ½ cups all-purpose flour
¼ cup sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
¼ cup unsalted butter, melted
 
Filling
1 cup light brown sugar
1 tablespoon cinnamon
2/3 cup creamy peanut butter, slightly melted
 
Icing
1 cup powdered sugar
½ cup grape jelly
3 tablespoons milk
 
1. Preheat oven to 425 degrees F, line and lightly grease a 11×8 pan
2. Whisk flour, sugar, baking powder, baking soda, and salt together
3. Combine buttermilk & melted butter, then stir into dry ingredients until incorporated (dough will be sticky and rough)
4. Knead the dough 4x (or until smooth) then divide in half
5. Roll each half into a 11×8 rectangle then spread the peanut butter on top
6. Combined brown sugar & cinnamon, then sprinkle it over the peanut butter
7. Roll dough into a log, starting with the long side farthest away from you, cut each log into 8 pieces
8. Bake for 15-20 minutes or until light golden brown
9. Whisk the icing ingredients together, then drizzle over warm rolls
